There’s nothing quite like freshly fried akara with pap for breakfast. The best part? Using beans flour means there’s no soaking, peeling or blending beans first.
This simple recipe gives you soft, fluffy akara with a crispy golden exterior in just 15 minutes.
Ingredients
* 100g Laklata Beans Flour
* 1–2 tbsp Laklata Dried Pepper (adjust to taste)
* 1 tbsp Laklata Onion Powder
* Salt, to taste
* 100–120ml water (adjust as needed)
* Vegetable, sunflower or groundnut oil for frying
Method
1. In a mixing bowl, combine the beans flour, dried pepper, onion powder and salt.
2. Gradually add the water while stirring until you get a thick, smooth batter.
3. Beat the batter vigorously for 1–2 minutes using a spoon, whisk or hand mixer. This step is important because it traps air and makes the akara light and fluffy.
4. Heat enough oil in a deep pan to 170–180°C.
5. Scoop small portions of batter into the hot oil.
6. Fry for 2–3 minutes until the akara floats to the surface.
7. Turn and fry for another 1–2 minutes until golden brown on both sides.
8. Remove and drain on paper towels before serving.
Serve hot with millet pap, Kunu Tsamiya, Kunu Tamba, or bread.
Tips for Perfect Akara
* Keep the batter thick so it holds its shape in the oil.
* Beat the batter well before frying for extra fluffy akara.
* Don’t overcrowd the pan, as this lowers the oil temperature.
* If the akara doesn’t float after a short while, whisk the batter for another 30–60 seconds.
